We would keep the following morning light if a long outing tends to leave you tired. That is a pacing recommendation. Do not plan a day trip around an exact arrival back in Tbilisi unless your provider has confirmed a suitable arrangement and you have allowed for disruption.
Choose one night for a slower visit
One night separates the outward drive from the return. The useful question is what you will do with the evening and morning you gain. A meal without watching the departure clock, time around town, or a less compressed visit may be enough reason to stay.
Gergeti Trinity Church stands above Stepantsminda, and walking is an option. Whether you should walk depends on the route, conditions and your ability. Confirm those separately instead of treating an overnight booking as proof that a hike will fit.
